One year olive oil production was so small that there was no oil left to preserve and store the cheese. So they thought of preserving it in the mud of wine. The result was excellent and since then it has been established as the ‘Cheese of Posa’.
It is mainly goat cheese. It is placed on the wine bar and with the help of a few local pine barks, it gets externally a red colour with the typical acidic aromas of local wines.
